These days, fad diets and strict food rules dominate health trends. Most people follow them with a clear goal—whether it’s to lose weight, gain muscle, live healthier, or align their diet with their values.

While many of us have cut foods from our diets, few have taken on a challenge like Dr. Nick Norwitz. A researcher and educator, Dr. Norwitz aims to “Make Metabolic Health Mainstream.”

Recently, he gained online attention through his YouTube channel by doing something extreme: he ate 700 eggs in one month.

That’s right—700 eggs. That breaks down to two cartons a day or one egg per hour for 30 days.

Why So Many Eggs?

To meet his goal, he consumed 24 eggs every day. But why? Dr. Norwitz wanted to test his theory that eating large amounts of cholesterol-rich eggs wouldn’t raise his LDL (low-density lipoprotein) cholesterol—the type typically labeled “bad.”

Challenging What We Know About Cholesterol

Most of us grew up hearing that cholesterol is dangerous. High levels supposedly increase heart risks. But today, expert opinions vary. Some believe cholesterol might not be as harmful as we once thought.

Now, this doesn’t mean you should try eating 24 eggs a day. But Dr. Norwitz’s experiment did reveal surprising results.

The Unexpected Results

According to his YouTube channel, his cholesterol didn’t spike. In fact, his LDL levels dropped.

  • After two weeks, his LDL cholesterol fell by 2%

  • By the end of the month, it had dropped by 18%

The Science Behind the Drop

Dr. Norwitz explained that the liver adjusts cholesterol production based on diet. When he added carbs—like bananas, strawberries, and blueberries—to his routine during the final two weeks, his LDL levels dropped even more.

“The extra dose of carbs dominated over the insane amounts of cholesterol I was consuming,” he said, according to the New York Post.
