For the Secret Sauce:

¼ cup mayonnaise
-
2 tablespoons chopped bacon
-
3 tablespoons ketchup
-
1 teaspoon sugar
-

Instructions
1. Form the Patties
Divide the ground beef into 3 equal portions. Shape each into a patty roughly the size of your rye bread slices.
2. Season the Patties
Sprinkle both sides with onion powder, garlic powder, salt, and pepper.
3. Cook the Patties
Heat a skillet over medium-high. Cook the patties until fully done. Set them aside.
4. Mix the Sauce
In a small bowl, combine mayo, bacon, ketchup, sugar, and relish. Stir well and set aside.
5. Prepare the Skillet
Wipe the skillet clean. Reduce heat to medium.
6. Butter the Bread
Spread butter on one side of each bread slice.
7. Assemble the Melts
Place 3 slices of bread (butter side down) into the skillet.
Top each with 2 slices provolone, 1 beef patty, and 2 slices cheddar.
8. Add the Sauce and Top
Spread the sauce on the unbuttered side of the remaining bread slices.
Place them on top, sauce side down.
9. Cook and Flip
Toast the melts until the bottom is golden and the provolone starts to melt. Flip carefully.
10. Finish and Serve
Cook until the other side is toasted and the cheddar is melted.
Remove from skillet and serve hot.
