Instructions

Step 1: Prepare the Salmon
Place the drained salmon in a large mixing bowl. Use a fork to flake the salmon into small pieces, removing any skin or bones if desired.

Step 2: Combine Ingredients
Add the finely chopped onion, flour, cornmeal, egg, mayonnaise, and a pinch of salt and black pepper to the salmon. Mix gently but thoroughly until all ingredients are evenly incorporated.

Step 3: Form Patties
Shape the mixture into 6–8 evenly sized patties, roughly the size of a hamburger. Press them lightly to ensure they hold together during cooking.

Step 4: Heat the Oil
Pour oil into a large skillet to a depth of about ½ inch. Heat over medium heat until the oil is shimmering but not smoking. Test with a small piece of the mixture—it should sizzle gently.

Step 5: Fry the Patties
Carefully place the patties in the skillet. Cook for 3–4 minutes per side, or until the exterior is golden brown and crispy. Avoid overcrowding the pan; cook in batches if necessary.

Step 6: Drain and Serve
Remove the cooked patties and place them on a plate lined with paper towels to absorb excess oil. Serve warm with your favorite sides such as:

  • Mixed salad or coleslaw
  • Steamed, roasted, or mashed vegetables
  • Rice, quinoa, or roasted potatoes
  • Tartar sauce or aioli for dipping
