This Crispy Potato and Bacon Sheet Pan is a simple, satisfying dish—perfect for a quick weeknight dinner or a flavorful side. Crispy potatoes paired with savory bacon are always a crowd-pleaser, and using a sheet pan keeps cleanup easy.
Ingredients:
4 medium russet potatoes, scrubbed and thinly sliced (~1/8-inch thick)
6 slices bacon, chopped into 1-inch pieces
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
2 tbsp fresh chives or parsley, chopped
Instructions:
Preheat & Prep
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil.
- Season the Potatoes
- Place sliced potatoes in a large bowl. Drizzle with olive oil, season with salt and pepper, and toss until evenly coated.
- Assemble on Sheet Pan
- Spread the seasoned potatoes in a single layer on the prepared pan. Scatter the chopped bacon evenly over the top.
- Bake
- Bake for 30–35 minutes, tossing halfway through, until potatoes are golden and crispy and bacon is cooked.
